I love coconut! Pinacolada, Bounty, coconut cookies… that’s like heaven to me. When I saw the picture/recipe on Claudia’s page I just needed to prepare it 🙂

Ingredients for the base:

5 eggs

½ cup sugar

1 cup flour

1 tsp baking soda

2 tsp cocoa

1 cup coffee

vanilla sugar

Coconut part:

500 ml milk

½ cup sugar

vanilla sugar

250 g coconut

200 g butter

Frosting:

2 milk chocolates (200g)

100 g butter

Whisk the egg whites until stiff. Still whisking, add sugar, yolks, flour mixed with baking soda and cocoa. This mixture pour into the form covered with baking paper (form Ø26 cm) and bake at 180 Celsius around 35 minutes. Soak chilled bottom with coffee mixed with vanilla sugar.

Boil the milk with sugars, add coconut and boil till dense. To that hot mixture add butter and mix it all well. Put it aside to cool down (stir it from time to time).

Pour the precooled coconut filling onto the chilled base. Top it with chocolate melted with butter.

Refrigerate for at least 3 hours or overnight.
