A dinner party necessitated the need for a dreamy dessert. Since my guests were familiar with my New York style cheesecake, I had to choose some other treat. Thousands of positive comments under the original recipe made me choose this one. Enjoy!
Ingredients for the base:
125 g chocolate covered digestive biscuits
40 g ground almonds
70 g melted butter
1 tbsp brown sugar (optional, white sugar will do!)
Grind digestives to a coarse powder, add almonds, butter and mix. Press this mixture into a spring-form baking pan (Ø20 cm) covered with baking paper and cool down in the fridge.
Ingredients for the cheese part:
500 g Philadelphia or some other cream cheese
115 g brown sugar
125 g dark chocolate (2/3rd of dark and 1/3rd of milk one in my case)
125 ml of fresh cream (30% vollrahm in my case)
grated skin of one orange
Mix cheese and sugar until well combined. Melt the chocolate but add when cooled. Add eggs, fresh cream and orange skin. Mix it until combined. Pour the mixture into the baking pan.
Bake it in a pre-heated oven (160 Celcius for around 1.5 hours). Cool it down (preferably transfer, when cool, into the fridge for around 8h). Decorate as desired and serve.
