This is one of the recipes which I wanted for a while. It reminds me about my childhood. These cupcakes taste the best the next day or even later. The recipe comes from this blog.



Dough:

300 g  flour

150 g  butter

50 g  sugar powder

2 tbsp fresh cream

3 egg yolks

Mix all the ingredients together into an elastic dough. Roll it into a 3 mm thick layer, cut out circles and place them into your cupcakes forms. Place the baking tray into the fridge while you prepare your custard. You also need to cut out circles to close the cupcakes after you fill them with custard.

Custard:

You can either use your favourite custard or prepare one from this recipe:

2 egg yolks

2 tbsp of sugar

2 tbsp of flour

1 ½ cup of milk

vanilla sugar

In a saucepan, whisk the egg yolks with sugar and flour until combined. Add vanilla. Now start to heat it up on the stove (medium heat) and add the milk. Remember to stir regularly to avoid lumps. When the mixture starts to boil and get dense, it’s all ready. Pour the custard into your baking tray, cover with the additional dough circles you prepared earlier (pinch the ends together so custard cannot leak out)

Bake in a pre-heated oven (190 Celsius, 20 minutes).

After taking out of the oven, turn the cupcakes upside down and sprinkle with powdered sugar.
