I was invited for a picnic and prepared these delicious sweet rolls the day before. Blueberry sweet rolls are really popular in Poland during summer. So this is another childhood reminder for me :). This recipe comes from here.
Ingredients for about 9 buns:
2 ¼ cup plain flour
¾ cup lukewarm milk
3 tbsp sugar
1 egg yolk
¼ tsp salt
60 g unsalted butter, melted
12 g fresh yeast or 7 g dry yeast
400 g of fruits (in my case 250 g blueberries plus 250 g mascarpone)
1 vanilla sugar
1 beaten egg for brushing
Combine milk, sugar, egg and a yolk. Add flour mixed with dry yeast, butter and salt. Knead until dough is smooth and elastic, form into a ball. Cover with a cloth and let it rise until double (1 – 1.5 hour).
After that time knead the dough again, divide it into 9 parts and then form them into small balls and place on the baking form (leaving some space in between). Cover with cloth and let it rise again.
When the buns doubled in size, take a glass and push the bottom into the middle of each of the dough balls. If you are going to use strawberries, you should place ½ tsp of bread crumbs on the bottoms of those to avoid leaking.
If you are going to use mascarpone, you should first mix it with whisked egg and a vanilla sugar.
Place the filling into prepared buns (first mascarpone and then blueberries).
Ingredients for crumble:
½ cup plain flour
5 tbsp of sugar
1 vanilla sugar
60 g melted butter
Use your fingertips to rub the butter into the flour/sugar mixture until the mixture resembles fine breadcrumbs. Scatter the crumble mixture over the sweet rolls.
Bake at 190 Celsius for 22 minutes.
These sweet rolls can be prepared only with fruits and crumble, they are equally tasty with that mixture.
