Ever since I have tried mascarpone in my blue berry sweet rolls I wanted to try it with something else. After short research I have decided to prepare a sweet roulade filled with it and some strawberries. Really short preparation is a big plus.  I will most certainly make it again 🙂 This recipe with some modifications comes from here.


3 eggs, separated

2 tbsp sugar

3 tbsp plain flour

2 tbsp starch

¼ tsp baking soda

16 g vanilla sugar


around 400 g mascarpone (or more)

250 g of strawberries

16 g vanilla sugar

Beat egg whites with electric mixer until stiff. Add sugar and mix till combined. Add yolks, one at a time and beat. Fold in sifted flours and baking powder. Line a baking form with baking paper. Spread mixture evenly into pan. Bake around 8 minutes in 190 Celsius.

Place a clean kitchen towel on the table, place a baked sponge upside down onto that towel, separate the paper from it, roll and cool with towel.

Unroll cooled roulade base, spread with mascarpone (mixed previously with vanilla sugar) and cut strawberries. Roll sponge from longer side. Sprinkle with icing sugar or decorate with the left over mascarpone and fruits. Refrigerate.
