I wanted to make blueberry muffins after I tried some from the Blueberry American Bakery.  The idea was to combine the coconut taste with blueberries. The recipe for coconut muffins comes from here.

Ingredients (makes about 7-8 muffins):

150 g flour

70 g sugar

½ tsp baking powder

¼ tsp baking soda

pinch of salt

8 tbsp desiccated coconut (56 g)

2 eggs

120 g melted butter

50 ml lemon juice (I added less, around 10 ml)

lemon zest (from 1 lemon)

250 g blueberries

Mix dry ingredients in one bowl, wet ones in the other. Add one to another, mix a little, fold in the blueberries and pour it into muffin form.

Bake 20 minutes at 180 Celsius. Cool down.

Author suggests also an icing. For that you will need:

80 g melted white chocolate

desiccated coconut

Brush the top of the muffins with chocolate, sprinkle with coconut.
