Calzone was on my “to do” list for a long time because I love pizza. My recipe comes from here.
Dough ingredients (makes 4 pieces):
450 g flour
1 tsp salt
2 tsp dry yeast or 16 g fresh ones
2 tbsp olive oil
250 ml warm milk
Ingredients for the filling:
4 tbsp olive oil
4 red onions, fine cut
2 cloves of garlic, cut
220 g of mushrooms, cut
2-4 tbsp fresh oregano
salt and pepper
220 g of cheese (cheddar or parmesan, grinded)
optionally: ham, sweet corn, olives
Fry onion and garlic on the pan with olive oil until soft. Add mushrooms and fry some more. Take the pan of the heat and add spices, oregano and olives if using. Set it aside.
Put flour, salt, dry yeast in the bowl and mix it. Make a crater in the middle and pour milk and olive oil. Knead the dough until smooth, coat in olive oil and let it rise until doubled (around 1.5 hours).
After that knead the dough again and divide it in 4. Roll every piece into a circle of around 20 cm diameter. On half of every circle put the filling plus cheese remembering about leaving about 1 cm edge. Brush the edges with water, fold the circle in half and stick the edges.
Place the calzones on the baking trays lined with baking paper and bake at 200 Celsius around 25 minutes or until brown.
