I really wanted to try those ever since I saw them on this website. It’s a nice breakfast option, especially when served with whipped cream and jam. Enjoy!

Ingredients (make about 10 scones):

2 cups flour

1/4 cup sugar

2 tsp baking powder

1/4 tsp salt

1/3 cup cold butter

1 large egg, lightly beaten

1 tsp vanilla extract

1/2 cup full cream (contains 35-40% butterfat)

Preheat oven to 190ºC and line the baking tray with a paper.

Whisk together the flour, sugar, baking powder and salt. Cut butter into small pieces and mix it with flour mixture till it looks like coarse crumbs. Mix together the whipping cream, beaten egg and vanilla. Add this mixture to the flour mixture. Stir just until combined (do not over mix).

Knead dough gently on a floured surface. Roll the dough into a circle (~ Ø18 cm). Then cut the dough into rounds with a 6.5 cm round cookie cutter. Place the cookies on the baking tray few cm apart. Brush the tops with a cream (it helps to brown the tops).

Bake for about 15 – 18 minutes or until nicely browned and a toothpick inserted into the center of a scone comes out clean. Remove from oven and transfer to a wire rack to cool.

Serve with cream, jam and butter or as desired.

These scones freeze very well.
