I tried to make this pie once before and I failed miserably. I think the problem was the lack of semolina and proper explanation. I prepared it once again this weekend and the result was quite delicious. It’s a very specific pie. It’s easy to prepare and definitely worth trying. My recipe comes from here and here.


1 cup flour

1 cup sugar (or less depending on the sweetness of apples)

1 cup of semolina

1 ½ tsp baking powder

1 ½ kg apples

around 200 g of butter (place it in the freezer)


Mix flour, sugar, semolina and baking powder. Divide in 3 parts.

Peel the apples; grate them on the grater (with the big holes).

Baking form (Ø 23 cm) line with baking paper (the bottom) and coat the sides with butter.

Pour 1 part of the dry mixture on the bottom, put half of the apples on it and sprinkle with cinnamon if you like. Pour another dry part on the apple layer and again apples (and cinnamon). Cover the apples with the last part of the dry mixture and grate the butter on it evenly (it will melt (with the apple juice) and combine all the layers).

Bake at 180ºC around 60 minutes.
