My favourite kind of coconut cookies which takes me back to my childhood. They are crunchy on the outside and chewy on the inside. The perfect combination for me! Found the recipe here.
Ingredients:
250 g dessicated coconut
1/2 cup sugar
2 eggs
50 g butter
3-4 tbsp flour
pinch of baking soda
Beat the eggs with sugar, add melted and chilled butter. Combine with coconut, flour and baking soda. Form little balls and place them on the baking tray lined with paper.
Bake 15 minutes at 170-180°C.
Let them cool down on the tray (they are too delicate to move them when they are hot).
