I wanted something sweet for Sunday morning so decided to bake these mini cheesecakes. They are easy and fast to prepare. This format is perfect for buffet parties.  The recipe comes from here. Enjoy!


Ingredients for 12 mini cheesecakes:

120 g ground Digestive

60 g melted butter

800 g cream cheese (I used Philadelphia, next time will mix quark with it 1:1)

1 tbsp vanilla extract

3 eggs

120 g icing sugar

fruits/chocolate for decoration

Mix ground cookies with butter and press it into the bottoms of muffin forms lined with baking paper.

Mix well cheese, vanilla, eggs and sugar. Pour onto the cookie base.

Bake around 25 minutes at 160°C. Let it cool and store in a fridge at least 4-5 hours (better overnight).

Serve with fruits or chocolate on top.
