Christmas is getting closer! I am trying out different recipes for Christmas cookies with Lebkuchen and Katie’s cookies (Katarzynki) waiting in a queue. This is the first kind I tried. Really delectable, crunchy on the outside, chewy on the inside. Easy to prepare and irresistible in taste. Try it! Totally worth it! I found the recipe here.


350 g ground almonds

400 g icing sugar

1-2 tbsp cinnamon

3 egg whites

Mix well almonds, 250g of sugar and 2 egg whites. Knead the dough well. Roll out portion of the dough on a sugar sprinkled surface (1 cm thick). Cut out desired shapes.

Place cookies on a baking tray lined with paper.

Mix the rest of sugar and an egg white to make the icing and brush the cookies with it.

Bake at 150°C around 15 minutes on the lowest shelf in the oven.

Additional info: You can substitute almonds with nuts. To twist the taste you can add some nutmeg and ginger.
