On Sunday I usually prepare something special for breakfast. This time I decided to prepare frittata which is an egg-based dish similar to omlette or quiche. It’s associated both with Italy and Spain. I liked it. White plate provided the recipe. Enjoy!
Ingredients for one frittata (Ø20cm):
200 g courgette, sliced
3 tbsp olive oil
1 tbsp chopped dill
1 tbsp chopped basil
1 tbsp grated parmesan
additionally 1 tbsp of other grated cheese (I used Gruyere)
Sprinkle sliced courgette with a tablespoon of olive oil and spice it with salt and pepper. Sprinkle grill pan with olive oil and grill the courgette’s slices on it on both sides. Remove from the pan.
Beat the eggs, add spices, herbs and cheese. Mix well. Add grilled courgette.
Heat up a pan (Ø 18-20 cm). Add the rest of olive oil, lower the heat and pour the egg mixture onto the pan. It will take around 8-10 minutes to fry it. When tortilla is fried on one side, put a plate over the pan, turn it upside down and move the tortilla back to the pan. Fry for another 2 minutes.
Slice it like pizza, serve with bread and butter or as desired.
