Quite easy and fast way to prepare a dessert. These little doughnuts are delicate and moist thanks to the addition of Ricotta cheese.  The recipe comes from “Feast” of Nigella. Enjoy!

Ingredients (make about 30 pieces):

200 g Ricotta

2 eggs

75 g flour

1 1/2 tsp baking powder

pinch of salt

1/2 tsp ground cinnamon

1 tbsp icing sugar

1/2 tsp vanilla extract


few tbsp of icing sugar to serve with

Beat the ricotta and eggs until smooth. Add the flour, baking powder, salt, cinnamon, sugar and vanilla extract and mix well.

Heat the pan with about 2 cm of oil. Drop rounded teaspoons of the batter into the pan, do not make doughnuts too big, they will puff up on cooking. Turn them over when they get golden brown. Make sure your oil is not too hot to not burn them.

Place them on the kitchen towel to remove excess of oil.

Serve sprinkled with icing sugar.
