Each year my lab hosts a Christmas party for which all of us prepare home made buffet snacks. This year I decided to prepare these tasty and easy to make muffins. I found the recipe here. Enjoy!

Ingredients (make 18 pieces):

DRY PART:

2,5 cups flour

2 tsp baking powder

1 tsp salt

spices: oregano, basil, paprika

pinch of hot paprika

150 g cheese (I used pizza mix and mozzarella)

200 g mushrooms

1-2 onions

200 g meat (ham, sausage, salami or all mixed)

WET PART:

1 cup milk

2 eggs

125 g butter

few tbsp of ketchup or salsa sauce

Mix flour, baking powder, salt, spices in a big bowl. Grate the cheese and add to the dry mixture (leave small part of the cheese aside for the topping).

Slice the mushrooms, onion and meat. Fry the onion first, add the mushrooms and fry everything together. Cool it down and add to the dry mixture. The author also fried the meat but I just added it to the dry mix without frying.

Beat eggs with milk. Melt the butter, cool it down and add to the egg mix.

Fold the wet ingredients into the dry ingredients and stir only until they are combined. Do not over mix the batter or it will result in the tough muffins.

Put 1 spoon of the batter in the muffin hole, put 1 spoon of ketchup or salsa sauce on it and cover it with another spoon of batter. Sprinkle each muffin with grated cheese and oregano.

Put in the preheated oven at 200°C and bake for 25-30 minutes.
