It’s now a tradition for me to have a new kind of pancakes for every Sunday’s breakfast. This time was no different. Kuptermas come from Russian or to be even more precise Tatarian kitchen. They are delicate, sweet and based on semolina.  You can fry them on a small pan as a  one big pancake or like me split it into small ones as you would do with normal pancakes. Ingredients (for 4 people):

500 ml milk

100 g butter

2 eggs

¼ tsp salt

1/3 – 1/2 cup sugar (you can substitute part of it with vanilla sugar)

1 ½ cup semolina

1 cup flour

7 g dry yeast

Boil the milk with butter and cool it down to the room temperature.

Beat the eggs and add to the milk. Add also semolina, sugar, salt, flour and yeast. Mix well.

Cover the bowl and set aside in a warm place to double (around 2 hours).

Prepare small pan if you want bigger single pancakes or normal one for the normal size ones.

Pour a little oil onto the pan, heat it up and fry thick (around 1 cm) pancakes.

Serve with jam, honey, golden syrup or some fruit sauces.
