Traditional gingerbread cookies known by every adult and kid in Poland. They are hard after baking but getting soft with time. I wanted to make them for a long time and a lot of good comments here convinced me. Enjoy!
200 g honey
1 tsp gingerbread spices mix
few tbsp of caramel or 1 tbsp cocoa
100 g icing sugar
400 g flour
3 tsp baking powder
Mix liquid honey with gingerbread spices, sugar, caramel and egg. Add the flour with baking soda. Knead the dough (it will be rather stiff). Roll it to 1 cm thickness and cut out cookies.
Put them on the tray coated with butter and sprinkled with flour.
Brush the cookies with water and bake at 190°C for around 12-15 minutes (do not over bake; it will make them too hard).
Additional info: you can add 1-2 tbsp of sour cream if the dough is not firm enough
In Poland we additionally coat these cookies with dark chocolate. You can do that only after they go soft.
