Another Sunday, another pancakes…I cannot really say I fell in love with these but each to their own I guess. Maybe because I was missing lemon zest  they did not taste as they should have had. They are tasty but not delicious. Try it and judge yourself. Enjoy!

Ingredients (make about 12 pieces):

¾ cup flour

250 ml butter milk or natural yoghurt

½ tsp baking soda

½ tsp baking powder

lemon zest from 1 lemon

½ tsp cinnamon

2 tbsp brown sugar

2 tbsp oil

1 medium size banana, sliced

150 g pineapples, chopped up

 

Mix flour, sugar, baking soda and powder, cinnamon. In the other bowl mix egg, butter milk, lemon zest, oil, banana and pineapple. Combine both bowls and mix well.

Fry till brownish on the small amount of oil. Flip over when you see air bubbles on the surfaces of the pancakes.

Serve with maple syrup, golden syrup, honey or as desired.
