I wanted to make them ever since I saw them on the multiple blogs, including of course this one. I was a bit afraid that they will be too chocolatish for my liking but they are more than fine. Enjoy!
225 g dark chocolate in pieces
110 g butter
2/3 cup sugar (or less)
3 large eggs
2 tsp vanilla extract
½ tsp baking powder
pinch of salt
1 and 2/3 cup flour
icing sugar (around ½ cup)
Melt the butter. In the end of the process add the chocolate, melt it all together (careful, do not burn it!).
Separate egg whites from egg yolks. Beat the egg whites until stiff, add sugar and then egg yolks and vanilla extract. Mix with the chilled chocolate/butter part.
Mix flour with salt and baking powder. Add to the chocolate mass and mix well. Refrigerate for few hours (better over night).
Take the dough out and form little balls (the dough will be really hard) of 1,5 -2 cm diameter. Roll them in the icing sugar and place on the baking tray lined with baking paper.
Bake at165°C for 12 minutes. Cool down before serving (they are too fragile straight after taking out from the oven).
Additional info: The dough you roll your cookies from must be really hard. The best is to keep a part of it in the fridge, while you work on the first one. The softer the dough, the more cookies will flatten, won’t break and the sugar icing will be wet. You should also not bake them more than 12 minutes because they will get too hard.
