I think it was the first time when my pancakes were puffy starting from the batter and ending on the final product. Since the recipe comes from “Nigella Express”, these ones are fast and easy to prepare. Enjoy!
Ingredients (make 10 pancakes, 10 cm in diameter):
3 eggs, yolks and whites separated
3 tbsp sugar
1 tsp vanilla extract (instead I added one bag of vanilla sugar)
250 g cream cheese (I used 1/2 fat quark)
50 g flour
Mix well egg yolks and sugar. Add vanilla extract, cheese and flour.
Beat the egg white until stiff and fold gently into the cheese mix.
Heat up the pan with a bit of oil and fry pancakes (around 10 cm diameter) for around 30-45 sec on each side.
Serve with fresh fruit or as desired.
