Fat Thursday calls for a sweet and fatty things so this year I decided to make these little doughnuts. They are suitable just for one bite and very addictive. You just can’t stop on one. I took the recipe from Dorota and enjoyed it lots.
Ingredients for a huge bowl of mini doughnuts:
500 g flour
1 cup milk
3 egg yolks
50 g caster sugar
3 tbsp oil
1 tbsp vodka or rum
juice from a half of a lemon
20 g fresh yeast or 10 g dry
icing sugar and hot water for an icing
oil for deep-frying
Sieve the flour, mix with dry yeast (fresh ones need starting with sugar and a bit of warm milk). Add the rest of the ingredients, in the end adding the oil. Knead the dough until smooth (the dough is really sticky). Form a ball, sprinkle with flour and set aside to double in size (around 1.5 h).
Afterwards take the dough out on a flour sprinkled surface, roll to 1-1.3 cm thick layer and cut out doughnuts (Ø 3 cm). Leave them on a sprinkled tray to rise a little (10-15 minutes).
After that time deep fry them till golden in the oil (175°C). If you do it in a deep fryer, then put the doughnuts in and on top of them put the metal basket you use to make fries. If you fry them in a normal pot then use a smaller lid to push them down.
Apply the icing to the entire doughnuts while still warm (1 cup icing sugar mixed with 4-5 tbsp of hot water).

All the ingredients put into machine in the order: liquid, dry and in the end yeast. Put the “dough” program to knead and rise. After that time take the dough out and follow the recipe.
