New muffin forms were a good excuse to make these cakes. They were really moist and soft. That is important to me because I am not a big fan of dry cakes. The addition of whipped cream made them really similar to a famous Black Forest cake. I think it is worth making them. The recipe comes from this blog. Enjoy!
Ingredients for 12 pieces:
¼ cup cherries
¼ cup cherry lemonade or syrup
80 g butter
50 g dark chocolate
½ cup sugar
35 ml cherry brandy
1 cup flour
¾ tsp baking powder
½ tsp baking soda
1 tbsp cocoa
1 egg
½ cup cherries whole or in halves to mix into batter

Dry ¼ cup of cheeries and remove seeds. Blend it with lemonade or syrup.
Melt butter, chocolate, sugar and Kirsch on a small heat until they all combine and then cool the mixture down.
Sift flour, cocoa, baking soda and baking powder into a bowl. Mix with chilled chocolate mixture, add the eggs, the cherry mixture and mix until smooth. In the end add ½ cup of cherries and mix again.
Divide the batter between the muffin cups. Bake around 20-25 minutes at 180 ºC (till the toothpick with which you poke the cakes comes out clean).
Cool down and decorate.
