It was requested from me for a picnic at work. Picnic which after all turned into a big feast indoors ;). Nonetheless it was quite delicious. I let the yeast work overnight and finished it in the morning so it was fresh and very tasty. The recipe comes from here with my filling modifications.

Ingredients for the dough:

500 g flour

35 g fresh yeast

1-1.5 cup luke warm water

1 tsp sugar

10 ml olive oil

1 tsp oregano

1 tsp salt

1 tsp basil

pinch of chili

Ingredients for the filling:

200 g ham

200 g mozzarella

150 g mushrooms

3-4 tbsp pesto

oregano, basil, paprika, pepper

Mix yeast with ½ cup of warm water, tablespoon of flour and sugar. After it doubled, add flour, the rest of the water and oil. In the end add salt and all the spices. Knead for around 10 minutes on a flour-sprinkled surface.

Coat your bowl with the olive oil, place the dough in it and coat it with oil to avoid drying. Cover with humid kitchen cloth and leave for 1 hour to rise.

During that time prepare the filling: cut the mushrooms and ham into slices, grate the cheese.

After one hour punch the dough and knead for another 3 minutes. Leave it aside for 5 minutes and then roll out a rectangular (~30×40 cm).

Spread the pesto, arrange the ham, mushrooms and cheese on it leaving 1 cm edge free. Spice it up. Roll it from the longer edge but leave the ends open. Now stick the ends together forming a circle. Cut the roulade every 5 cm (leaving around 2 cm from the middle) moving the cuts to separate the ends from sticking together. Cover with the kitchen cloth and leave for another 30-40 minutes.

Heat up the oven to 180ºC. Brush the roll with milk, sprinkle with basil and oregano and bake for 30-40 minutes.

Additional info:  As a filling you can use (as in the original recipe)15 dry tomatoes, 2 cloves of garlic, 3 tbsp walnuts, 1 tbsp tomato paste, 1 tbsp red pesto, 1 tsbp olive oil, 100 g mozzarella, pinch of oregano, salt and paper to taste. Use the mortars to grate the nuts, add garlic cut into slices and grate again. Add the rest of the ingredients and mix it all together.
