Classic blueberry pancakes were the main course of my Sunday’s breakfast. They were really tasty and nicely fit into my pancakes collection. I found the recipe here. Enjoy!

Ingredients (make about 8 x 7.5 cm pancakes):

1 cup flour

1 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

2 tbsp sugar

1 large egg, lightly beaten

1 cup buttermilk

3 tbsp butter (40 g), melted and cooled

fresh or unthawed wild blueberries

In a large bowl whisk together the flour, baking powder, baking soda, salt and sugar. In a separate bowl whisk together the egg, buttermilk and melted butter.

Add the egg mixture to the flour mixture and stir just until combined. The batter should still have small lumps.

Heat a frying pan over medium heat with a bit of oi, pour 1/4 cup of batter on it and sprinkle with berries. When the bubbles start to appear on the uncooked top surfaces of the panckes, turn them over.

Serve with maple syrup or jam.
