The proposition for rhubarb and pancakes lovers. What can I say? They are delicious. Puffy, crispy on the outside and soft on the inside. Sprinkled with icing sugar made the perfect Sunday’s breakfast. I found the recipe here. Worth trying!

Ingredients for 2 plates of pancakes:

2 cups flour

2 tsp baking soda

1 tsp cinnamon (I skipped it)

3 tbsp icing sugar

1 cup of dense cream or yoghurt or butter milk

1/2 cup milk

2 eggs

350 g rhubarb, cut in small pieces

Mix flour with baking soda, cinnamon and sugar.

Mix cream with milk and lightly beaten eggs.

Mix both bowls together till there is no lumps.

Add sliced rhubarb and mix.

Fry on a medium heat till golden.

Serve sprinkled with icing sugar.
