After spending some time in Poland, I felt like having something traditional which my mom would make for me when I was a child. My choice was a sweet version of pierogi served often during summer. You can use all kinds of berries, strawberries and blueberries are the best choice though. Enjoy!
Ingredients (for 10-15 big pierogi):
300 g flour
200-250 g blueberries or other berries (I used frozen forest blueberries)
2 tbsp sugar
Clean the blueberries and let them dry. Mix them with sugar and put them aside till the dough is ready.
Mix the flour with egg and gradually add hot water. Knead the dough (at the start with a fork) till it’s elastic. Make sure it is not too hard or too lose. If that is the case add more water or more flour, respectively.
Divide the dough in 3-4 parts and roll one part (while keeping the others in a bowl covered with kitchen cloth) to 2 mm thickness. Cut out the circles, place the berries on one half and cover with the other. Stick the edges, first with fingers and then with a fork.
Boil big pot of salty water and place the pierogi in it. Stir from time to time to avoid sticking and after pierogi appear on the surface boil them for 2-3 more mins.
Serve with fresh cream and sugar.
