Last weekend came and a party with it so it was time for a good cake. I chose this one because it reminded me of a birthday cake and a party was also thrown because of that. It was a delicious choice. I found the recipe on my favourite blog. Enjoy!
Ingredients for biscuit:
130 g su gar
100 g flour
33 g cornstarch
Separate egg whites from egg yolks. Beat the egg whites until stiff. In the end of beating gradually add sugar. Furthermore add yolks (one by one).
Mix both flours and gently fold it into batter (on the lowest gear of the mixer).
Line the cake tin (ø 21-22 cm) with baking paper. Do not coat the sides with anything, line just the bottom. Pour the batter into it and bake at 160-170°C around 30-40 min (till the toothpick inserted in the biscuit comes out clean and dry).
Drop the hot biscuit in the form on the floor from 60 cm height. Let it cool in the open oven.
Cool it down and divide into 3 layers.
To soak the layers:
160 ml strong coffee (cooled down)
80 ml coffee liquor
Mix it together.
Ingredients for the filling mass:
750 g mascarpone
150 ml full cream
100 g sugar with vanilla or icing sugar mixed with vanilla essence
Beat the cream until whipped in the end adding sugar. Add mascarpone and mix shortly with a mixer.
100 g dark chocolate (grated or chopped up)
Assembling of the cake:
Place one piece of biscuit on a plate. Soak it with 1/3rd of coffee mixture. Spread 1/3rd of mascarpone mix on it and sprinkle it with 1/3rd of grated chocolate. Then place another piece of biscuit on top of it and repeat. End the cake with mascarpone mix sprinkled with chocolate and spread some of it also on the sides.
Refrigerate for at least 3 hours.
