Did not post anything here for ages but here it goes.  Another one to the cheesecake collection. This one is really rich and creamy. It has all the flavours I love: Baileys, vanilla and chocolate. Took the recipe from Dorota and as usual I was not disappointed. Enjoy!

Ingredients for the base:

190 g digestive in a dark chocolate (I used the ones without it)

60 g melted butter

Ingredients for cheese part:

700 g cream cheese (1:1 Philadelphia and quark in my case)

¾ cup sugar

4 eggs

2 tsp vanilla extract

1/3 – 1/2 cup Baileys

½ cup chocolate chips or chopped up dark chocolate

2 tbsp full cream

Prepare cake tin (ø 23 cm) and line it from the outside with an aluminium foil (you will need that if you will bake it in water bath).

Smash the cookies and mix them well with melted butter till it resembles wet sand. Press it into the bottom of the cake tin and refrigerate till the cheese mass is ready.

Mix all the ingredients for the cheese mass at the end adding the chips. Pour it onto the base.
Place the cake tin in the bigger form into which pour the water to 1/3 rd of the cake form height (you can also bake it normally but they say it’s more creamy when you bake it in a water bath).

Bake at 170°C around 1 hour or till the top is settled.
