Classic blueberry muffins. Very tasty, delicate and soft. Simply delicious. I used the recipe from Australian Women’s Weekly “Muffins, scones and breads”. Enjoy!
Ingredients (make 6 big muffins):
2 cups flour
1 1/2 tsp baking powder
3/4 cup brown sugar
1 cup fresh of frozen blueberries
1 egg, lightly beaten
3/4 cup buttermilk
1/2 cup vegetable oil
optionally: I added 8 g vanilla sugar.
Grease 6 hole muffin pan (or use the silicone ones).
Sift dry ingredients into large bowl, stir in the remaining ingredients.
Spoon mixture into prepared muffin forms.
Bake at 200°C around 20 minutes.
