Today on the menu cake with plums and coconut.  I did not expect the combination of plums and coconut to be that good. This cake is nicely moist and certainly an interesting proposition for coconut lovers. The recipe comes from here. Enjoy!

Ingredients for Ø26 cm cake tin:

800 g plums (cleaned, dried and without seeds)

4 eggs

150 g flour

215 g sugar

2 tsp lemon zest

juice from half of the lemon

1 tsp baking powder

125 g soft butter

2-3 drops of rum aroma

100 g desiccated coconut


Mix butter, flour, baking powder, 125 g sugar, 2 eggs and 2 egg yolks (keep the egg whites in the fridge), 1 tsp lemon zest and rum aroma.

Place the batter in the cake tin lined with paper, arrange plums on top (cut side up) and bake it 30 minutes at 160°C.

In the end of baking start preparing the topping: 2 egg whites warm up on the stove constantly mixing with 90 g sugar, coconut, 1 tsp lemon zest and lemon juice.

Take the cake out of the oven, spread the topping on top of it and bake for another 25-30 minutes.
