Christmas calls for gingerbread cookies so I made them. They are one of the easiest cookies to prepare. You just mix all the ingredients together and carve out the desired shapes. You can involve children in making them and then decorating. The recipe comes from my favourite blog of course. I know I still have to work on my decorating skill but nonetheless the result was delicious. Enjoy!
¼ cup honey
5 tbsp soft butter
½ cup brown sugar
2 ¼ cup flour
1 tsp baking soda
3 tsp gingerbread spices
Optionally: 1 tsp cocoa if you like your cookies to be darker
All the ingredients mix together and knead the dough.
Roll it out to 3 mm thickness on sprinkled with flour rolling space. Cut out desired shapes.
Place on a baking tray lined with baking paper and bake around 10 minutes at 180ºC. Do not over bake them because they will become bitter.
Cool down and decorate.
Icing: 1 egg white mix with as much icing sugar till it makes dense mass. Add food dyes.
To make cookies shiny, one can brush it with beaten egg.
Cookies are really soft after baking, later they become harder and then again soft. Store them in a tightly closed container.
