Finally had some time and possibility to make something tasty. Never really was into cheesecakes without baking but this one stole my heart. It takes only 30 minutes to prepare (minus the cooling time)! Plus it’s very creamy, light and simply yummy. I took the recipe from here. Enjoy!

Ingredients for the base:
160 g digestive cookies in dark chocolate
50 g melted butter
Grind cookies, mix with butter. Line a 20 cm tin (I used 17 cm) with baking paper, cover with cookies’ mix and even with a spoon.
Refrigerate for the time of making the cheese mixture.
Ingredients for the cheese part:
250 g cream cheese (i.e. Philadelphia) or curd cheese for cheesecakes (minced 3 times)
300 ml double cream
100 g toblerone bar, finely chopped
120 g white chocolate
Beat the cream. Add cheese and mix finely. Melt the chocolate in a bowl over a saucepan with boiling water, add to the cheese mixture and mix quickly (for instance with a blender).
Add chopped toblerone bar and stir.
Transfer the cheese mixture on a cooled base and even.
Refrigerate for a whole night.
Serve decorated with i.e. grated chocolate.
