I was in the mood for pancakes and had a left-over apple. Cinnamon and apples are a great combination so I decided to prepare these ones and add some cinnamon to the batter. The result was delicious. Enjoy!

Ingredients (make 12 pieces):

1 egg, beaten

¾ cup milk

1 cup flour

1 teaspoon baking powder

1/4 tsp salt

1/8 cup sugar

1 apple, peeled and coarsely grated

1 tsp cinnamon

Mix the egg with the milk in a large bowl.

In a smaller bowl, whisk the flour, baking powder, salt, cinnamon and sugar together.

Combine the wet and the dry ingredients and stir in the apples.

Heat a thin layer of oil in a pan over medium heat and fry pancakes (appearance of air bubbles on top is a signal to flip them to the other side).

Serve sprinkled with icing sugar or with an apple mousse.
