I did not post any recipe for a long time. Let’s start from something easy and delicious. I found those mini cakes by accident in the old recipes of my culinary guru. I had some cream cheese at home and thought that those will be perfect with a cup of coffee. Enjoy!
Ingredients for 32 spirals:
225 g butter
225 g cream cheese
2 tsp sugar
1 egg mixed with 1 tsbp of milk
Granulated sugar to sprinkle on top
115 g walnuts or pecan, finely chopped
75 g light brown sugar
1 tsp cinnamon
Mix all the dough ingredients, adding the flour at the end (add more flour if needed). Form a ball, divide it in two, flatten each of the parts, put them in the plastic bags and refrigerate for at least 30 minutes.
Prepare the filling: simply mix all the ingredients.
Take out chilled dough, roll first ball into a circle of 30 cm diameter, sprinkling with flour so it will not stick.
Brush the flatten dough with an egg and sprinkle it with half of the filling.
Divide the circle like a pizza, first into 4 quaters and then each quater agian into 4 parts. Roll them from the outside to the middle.
After rolling, brush each spiral with egg and sprinkle with sugar. Do the same with the other part of the dough.
Place all the spirals on the baking tray lined with baking paper and bake around 30 minutes at 170ºC (after baking they might seem a little wet on the inside but they will get better when cooled).
