Finally got some strawberries this season! Couldn’t wait! Had so many ideas of what to make with them. After all I decided to make those muffins since they were really easy and not at all time consuming. I found the recipe here. Enjoy!
Ingredients for 12 muffins:
2 1/3 cups flour
1 tsp baking powder
1 tsp baking soda
¾ cup sugar (can be a light brown one)
100 g butter
230 g natural yoghurt
2/3 tsp of essence (I used vanilla one)
180 – 200 g cleaned strawberries
2 ½ tbp cold butter
4 tbsp flour
4 tbsp light brown sugar
6 tbsp almond flakes
½ tsp cinnamon
To make crumble:
Mix flour, cinnamon and sugar. Add cut butter and mix it all between your fingers till it resembles crumble. Add almond flakes, mix again and put aside.
To make muffins:
Melt the butter. Cut strawberries in little pieces.
Mix flour, baking soda, baking powder and sugar.
In another bowl mix the yoghurt, eggs, essence and melted butter. Add dry ingredients and mix shortly to combine all ingredients (do not overmix!). Add cut strawberries and mix shortly again.
Place 1-2 tablespoons of muffins mixture in the muffins holes lined with papers or in the silicone forms. Sprinkle the crumble on top of them, lightly pressing.
Bake 25-28 minutes at 190°C.
