Constant lack of time. This is how I would describe my life lately. It is of course rewarding to see the little one developing and growing but he is highly time-consuming and doing anything else but taking care of him is very hard. I made those muffins during one of his very short naps. I had two very ripe bananas and did not want them to go to waste. The result was very tasty and juicy. Love bananas in cakes! Found the recipe here, enjoy!

Ingredients:

280 g flour

1 ½ tsp baking powder

½ tsp baking soda

pinch of salt

90 g sugar

2 tsp vanilla sugar

1 large egg

50 ml milk

75 g melted and cooled butter

2 big, ripe bananas

50 g dark chocolate, roughly chopped

 

Mix flour, baking powder, baking soda and pinch of salt in one bowl.

Smash the bananas in the other, add sugars, egg, milk and butter. Mix well.

Combine both bowls and mix with a fork only till ingredients combine. Do not over stir. Add chocolate.

Pour the batter into muffin forms. Bake at 180ºC for around 25 minutes.
