Very simple and yet delicious cake. I got a recipe from my aunt and since then make it at least every few months to celebrate various things. I used it as a birthday cake for my son with a bit of decoration and many others. Enjoy!
1.5 cup flour
2 tsp baking powder
4 (or more) tbsp of cocoa
1 1/4 cup sugar
Sift flour with baking powder, add cocoa, mix.
Whisk chilled egg whites until stiff, add sugar and egg yolks and mix gently. In the end add flour with cocoa and baking powder in a few portions and mix with a wooden spoon.
Line 26 cm cake tin with a baking paper and pour batter into it. Bake 40-45 minutes at 180 degrees.
Cool it down and cut into three layers.
2 cans of dulce de leche (classical and variety, i.e. chocolate or coffee one)
1000 g mascarpone
100 g almond flakes
1 can of classical dulce de leche mix with 500 g of mascarpone. Repeat with another variety of it.
Put one layer of cake on the cake stand. Spread one of the creams on it (leave some for covering the sides of cake). Place another layer of biscuit on top of it and spread another one of the creams (also leave some for the top layer). Place the last piece of cake on top of it. Spread the lighter colored cream on top of it. Spread the rest of the darker cream on the sides of the cake.
Carmelise almond flakes on a pan with a bit of water and brown sugar. Sprinkle the top and sides of cake with it. Cool it for at least 3 hours. Enjoy!
