Two weeks ago was my son’s 5th birthday party so I had to make a few things, including those delicious cookies. They are perfect for the chocolate lovers: full of dark, milk and white chocolate, with addition of raisins. Polish people will surely notice similarities to our cookies called ‘Pieguski’. You can store them up to 10 days in a airtight can. Recipe from my baking guru. Enjoy!
Ingredients for 40 pieces:
125 g unsalted butter
160 g fine brown sugar
1 egg
185 g flour
1 tsp baking soda
¼ tsp baking powder
35 g cocoa
85 g raisins
95 g milk chocolate, chopped
75 g white chocolate, chopped
75 g dark chocolate, chopped
All ingredients should have a room temperature.
Mix butter with sugar and vanilla until fluffy. Add egg and still mix. Add dry ingredients and mix only till incorporated. In the end add raisins and chocolate, mix again.
Form balls the size of walnuts from the dough. Place on the baking tray lined with a baking paper, flat them a little with a spoon. Leave at least 5 cm distance between cookies.
Bake at 170 ºC around 10 minutes. Wait for a moment before you move them to the cooling rack, they will be very soft. Let them cool completely before eating. Enjoy!
