I got this recipe from my mom. I have helped her making those cookies and even though we made like 50 of them, I do not think it took us more than 20 minutes (that includes kneading and peeling apples). And of course, the result was delicious. Enjoy!
I had a few spare apples and some strawberries and was wondering if I can make something with them which would remind me of my early steps in the baking department. I used to prepare those envelopes filled with apples when I was less than 10 years old. The decision was quick. After short preparation, I could enjoy my little pieces of childhood. Originally this cake is called the smile of the mother-in-law. Odd name, isn’t it? It does not disturb the cake to be interesting and quite delicious though. I found this recipe ages ago, when my cooking adventure was just starting. Sadly the blog I took it from does not exist anymore so I cannot show you from where the recipe came from originally. I think this way of preparing apples may serve as a breakfast or as a dessert. The only thing one must remember is to cut the apples into slices no more than 0.5 cm thick, otherwise they will stay crunchy and won’t cook. Enjoy!
Yummy… last Sunday I finally prepared polish apple pancakes with addition of yeast. They make them thicker and give them different structure from normal pancakes. My mom used to make them when I was small, especially during fasting time. I like to serve them with an icing sugar but you can also have them with jam, syrup or honey. My recipe comes from here with little modifications. Enjoy!
