My mom calls this cake a toffee cake but really it is much more than that. It has a cheery-jam layer combined with salty crackers layer covered with toffee and whipped cream. The combination of tastes is mouth-watering and it was a hit on the lab party I organised two weeks ago. Enjoy!
I wanted to make this English tart for a long time. I was looking for a proper recipe and of course found it on my favourite blog. According to Wikipedia, Bakewell tart was developed from the Bakewell pudding (this one was made by accident in 1860s). It consists of a shortcust pastry base, spread with jam and covered with a sponge-like filling enriched with ground almonds (known as frangipane). I liked the combination of raspberries and almonds. I know, I know… most of you know doughnuts as the ones with the holes inside. In Poland doughnuts look like the ones on the picture above and the ones with the holes we call simply “tyres”. Polish tradition calls for doughnuts during Fat Thursday. Eating at least one is supposed to help in being happy the entire year ahead. I prepared them last weekend because I liked the picture and the recipe on this website. They are delicious! Too bad I cannot eat more than 1-2 doughnuts one time…
I was really curious how will all these tastes combine and my curiosity was rewarded. The result was delicious. I modified the original recipe by adding raisins and substituting raspberry jam with the strawberry one. My modifications did not change much and similarly to the author, I felt satisfied. Enjoy!
